The Pursuer is a very difficult boss when you don't have a good shield or a high damaging weapon, as is the case with SL1 characters at this point. Fortunately, the Pursuer can be cheesed to death by hitting him with the ballistas in his boss arena.
Not shown here is that the Pursuer can be parried, and doing so at the start of the fight is a great way to leave him stunned long enough to shoot him with the ballista. Also, fire bombs are a great way to do damage to him if you don't want to dodge around and poke him with a dagger.
