There are a few things people assume cannot be parried for no other reason than they have never seen someone do so. They only haven't seen someone do so because certain things are just not used frequently enough for most players to get a chance at parrying it. Moonlight Greatsword's weapon art is one of these, while a lot of people use the weapon not many use its weapon art and very few use it more than once if they do. It can most definitely be parried though.
