Slave Knight Gael is the last boss of this DLC, and he'll require your undivided attention. So, lets go through a few tips that may help you defeat this challenging boss.
Phase One: This Phase is straight forward with many quick attacks. Most of them will connect, so be prepared to dodge. When you stagger Gael it may be tempting to continue hitting him, but his stagger does not last for very long. Holding back from being greedy may be a better option here, depending on your situation. Try to bait his Sword Slam (2:05), and dodge through for some free attacks. His 5 hit Combo attack ends with a Sword Slam (1:54). He starts this attack by bursting out in anger. If you are at a safe distance (as shown in the video) simply dodge the third and fifth attacks, while backing up for the others. There are some awkward attacks that you may need to pay attention to. Don'r forget to keep an eye on your stamina, it may run out faster than expected.

Phase Two: What is likely to hit you unexpectedly in this phase is Gael's Crossbow attack. After a certain attack, for example at 4:00 , 4:50 and 6:02, he may take out his trusty Crossbow to test on you. Hitting him when he is using it will stagger him and cancel this attack. Time it so that you hit him when/if he takes it out. If he does not take it out then to have time to dodge away before getting hit by a melee attack (4:50). It is very difficult to dodge through an attack when it has a following delayed fire trail, such as in this phase. To avoid it properly dodge against/into the incoming attack. If the attack is coming from the left, dodge to the left. Look for his Running attack (5:23), to go in for some attacks. Back out, rinse and repeat.

Phase Three: This Phase starts when Gael stops in agony. You may get some attacks in at this point, but beware of the explosion that is about to happen (6:13). Skulls will fill the air accompanied by some other attacks. When you see these skulls, it is best to get far away. When they land they become a spawning area for lighting bolts. Keep away from these areas by baiting Slave Knight Gael away from them. Most of his attacks are similar to those in the Second Phase, with a couple of new ones. Bait his running attack like in second phase. He will have two variations of follow-up attacks, and both can be successfully avoided and punished by using the following method. Dodge through the Running attack, sprint to the side, and punish (8:14, 8:23). Rinse & repeat, and victory will soon be yours!
