I found that probably one of the easiest quests to do for these two trophies, as well as being easy enough to be able to do both in a single attempt, is the "Delivery to Pastura" quest. As soon as you finish the tutorial, (the game is polite enough to tell you when you are done), you will finally be given the choice to do "Single" quests. Among these you will find the quest "Delivery to Pastura".
As of posting this video, I am unsure if you can get the same quests again after having completed them if you update the list of single quests. However, you CAN get access to the quest again if you start a new game and redo the tutorial. With your existing knowledge of the game mechanics it doesn't take too long to complete again.

Although it has been a little while, (and a couple of people have raised some concerns), I figured that it wouldn't hurt to give this another look. I just started up a new game on a separate profile (so as not to lose my save data) and played through the tutorial up to the point where you can first accept the "Delivery to Pastura" quest.
Although the map itself was the same for me, the enemy placement WAS different. In fact, this time through was even easier than what I have shown in the video. I went through from the start yet again and the placement was changed once more, although this time it was more difficult but still doable. After some testing, (reloading the save, starting over yet again) I have come to the conclusion that once the quest is given to you, the map is set and there is no way to alter the enemy placement. However, if you are willing to stomach the tutorial (potentially multiple times) you can keep starting over again until you get a favourable enemy placement.
Unfortunately, since I did this testing on an alternate account, I did not have PS+. If I did, I would have tested out uploading a save to the cloud before doing the last tutorial mission to see if the "Delivery to Pastura" quest would still randomise, in an effort to cut down on having to do the tutorial right from the start.
CONCLUSION:
If the map you get is not quite the same as the video, do not despair. Chances are, there is still a way though the map, although it might just be more/less difficult. If it is too difficult or even impossible to do, (not sure if enemy placement could make it impossible or not), you can always try your luck again with a restart. However, if you have PS+ I would highly recommend that you upload a save to the cloud before completing the last tutorial mission in the event that a reload from that could save you a significant amount of time redoing the tutorial.
