I personally found this easiest to complete by fully stocking up on Throwing Knives, then travelling to a Grizzly Bear spawn - like the one slightly Northwest of Wallace Station - and riding around on horseback until you hear the Grizzly.

When you do, save your game as more often than not, if/when you reload, there will be a Grizzly near you (although not always in the exact same place!), which obviously makes this highly repeatable incase you don't complete it on your first try.

Now, I don't know this is always the case, but when I encountered the Grizzly in the forest, I charged at it with my horse and it began to retreat. As long as you're able to stay with it and land 6 shots with a Throwing Knife, you'll kill the Grizzly without taking damage and clear the final Weapons Expert challenge!

With this short Red Dead Redemption 2 gameplay video, I'll give you some tips on how to complete level/tier 10 of the Weapons Expert challenge set in RDR2!
