Dorayaki is a Japanese sweet / cake style thing. Super easy to make (if a little difficult to get perfect looking). Here is my first attempt at cooking this delicious sweet treat.
Ingredients:
(Pancake mix - if you don't have ready-made hot cake mix)
2 eggs
90g sugar
80g flour
1/2/ tsp baking powder
4 tbsp water
using HOT CAKE MIX
Main recipe:
120g Hot cake
20g sugar
1 egg
1 tbs honey
1 tbs mirin
vegetable oil for cooking in pan
(for inside the Dorayaki)
160 ml double cream
1 tsp sugar
210g / whole tin of anko (sweet red beans)
Instructions:
1. Beat eggs in a bowl. Add sugar and honey. Mix well
2. Sift hot cake mix and mix well
Pancake mixture is ready.
3. Heat pan and lightly fry the oil over low heat
4. pouring from a height pour in another pancake mix to make an 8cm diameter disc. (repeat process).
5. Flip pancakes over, once nice and golden on the underside.
Filling mixture:
1, Mix double cream in a bowl with sugar and whip into peaks.
2. Fold in and mix the anko
Finally, once pancakes are cooked. Let them cool. Once cool, take 2 pancakes and add in the mixture between them to make a sandwich.
Voila!
