Chapter 5-3: Extremely long chapter and arguably the hardest (in my opinion) to get S Rank on. Let's go through it all.
The first section I would recommend the Rocket Launcher as the majini will be on the opposite end of where you entered. Not only that, but you'll run into several Reapers along the way, in which case having the Rocket Launcher already equipped will be useful. After turning on the power to active the switch, you can have Sheva go if you want, just make sure to cover her by killing the enemies afar with your rockets. After making it across, keep your distance and continue using your Rocket Launcher to destroy the other majini from afar. Also, be careful as they have rockets of their own that can instantly kill either you or your partner. Once they're dead, make your way up the steps and head into the next room.
The next section is going to be on the rotating platform. For this, keep Chris with the Rocket Launcher and put Sheva in Attack Mode. One of the few times in the entire game where it's useful. That way she can take the initiative and kill the enemies before you have a chance to. Also, stick close by her incase either you or her get shot at. That way you can heal as necessary. After taking out the remaining emeries and the platform stops, head through to the next door.
The Licker Room is pretty simple. Instead of Sheva, send yourself up the elevator after activating the power to push the dumpster and use your Rocket Launcher to kill the nearby Lickers, or your magnum if you want to up your Accuracy for the chapter. After activating the power, make sure both of you are fully healed and get ready as the last part of the longest chapter, is also the hardest in attaining the S Rank.

Couple things before you start.
I. There's a 50% chance Sheva gets hit as soon as you near the door. After skipping the cutscenes, there's a 50/50 she gets put in Dying status. Pretty terrible, right? Well...there's a major trick around this to prevent you from racking up quick deaths.
II. USE THE RESTART BUTTON. As soon as you see either yourself or Sheva in Dying status, if you know you're not going to be able to heal in time, press the START button and hit RESTART. That way you can retry the fight without wasting a death. Remember, it only takes more than 2x Deaths to drop below S Rank, and that's assuming all other categories are already S Rank.
Now, onto the fight itself.
Jill & Wesker Fight: Immediately run to the doorway as it begins. After skipping the minor cutscene, 50/50 shot of Sheva getting hit. If she does, restart. If not, you should be able to hit Wesker once or twice with your magnum, if not to stun him while Sheva hits him. Eventually he should go down, giving her time to escape. With that out of the way, make your way up the stairwell and once you reach the top, turn around and wait. Sheva will be at the far end, while Wesker will make his way around the corner. As he does, pull out your Rocket Launcher and shoot at him. If you're successful, he should catch it. Now, once he does, shoot at him 3x with your magnum. The first time will blow up the rocket, and the next two will stun him. Don't bother engaging, as one wrong button press can cause you to die. Simply run away and Wesker should do the same. If he does, congrats!
Jill Fight: With Wesker gone, all that leaves is Jill. If you want to make this fight easier, bring along with you the Grenade Launcher and Flash Rounds. Combine the two and once you reach the lower level, keep stunning Jill while Sheva grabs her. This should give you enough time to either hit her or pull the device off her chest. I wouldn't recommend shooting the magnum, as it's easy to miss and cause an instant death. If at any point either your or Sheva gets hit, immediately restart if you haven't had any deaths. This will save you the trouble of not attaining the S Rank and you'll be able to restart the fight with her without having to do the first fight all over again. Keep at it and you should eventually be able to beat her!
Using the Restart option is key in saving your S Rank status. Very rarely will you not die on this chapter, especially the fight between Jill and Wesker. This is a long chapter and you don't want to have to keep repeating it because you failed to restart in time. Patience and a bit of luck is needed!
