With every course done, there is still the Shine Sprites in Delfino Plaza left to collect, and most of them are in secret courses. Mario can revisit Delfino Airstrip by paying the Pianta at the port 10 coins. Delfino Airstrip has one Shine Sprite, and it is a good place to collect 100 coins for the Shine Sprite for Delfino Plaza.

I have completed every course in Super Mario Sunshine, with the exception of Corona Mountain, and I want to get the Shine Sprites in Delfino Plaza out of the way first. The scene at the beginning of the video only appears when you load up your save data after unlocking Corona Mountain, but you don't see it all the time when exiting out of a course.
The first Shine Sprite that I show in this video is the gold bird on the island, which will appear after collecting 10 Shine Sprites, and the Shine Sprite will appear on one of the pillars on the water.
The next ones are the secret courses in Delfino Plaza, this one is the Turbo Track course, and it requires the Turbo Nozzle to break through the door guarded by the Pianta Police Officers, I wonder if they don't mind after how much blame Mario has received from their kind. The Turbo Track isn't really difficult, all you have to do is use the Turbo Nozzle and jump from different platforms, but you will need timing for this, specially with the platform where the Shine Sprite is.
There is one inside a tower in Delfino Plaza, talk to the Pianta on the roof, and he will throw Mario after giving him one coin, and inside said tower is a Shine Sprite.
The next secret course is the Red Coin Field, and it is easier to get there with the Rocket Nozzle, as there are a bunch of trees, and on a ledge is the Warp Pipe leading there. There are 8 Red Coins in the field, one is on top of a structure, four are obtained from two Pokey Heads and two Seedy Pods, one requires Ground Pounding a watermelon block, one of them can be obtained from a Pianta caught on fire, and you have to put out the flames, and one requires spraying the only red bird in the game. In the Japanese version, if you collect your 100th coin in this secret course, the game will crash.
The next course is another very infamous secret course, because what you have to do is ride on a boat with Yoshi, and on the island with a Pianta and a coconut tree, wait for another boat, which will pass by a pillar with a banana, and wait for another boat to show up, and spray the Juice Generator on the Warp Pipe, and it will take you to the secret course. This one is Lily Pad Ride, and this one is really difficult, because you ride a lily pad across a poisonous river and you have to collect 8 Red Coins in one try, and the Warp Pipe at the end takes you back to Delfino Plaza, so do NOT enter that, because that means you have to repeat the process with Yoshi.
When you have 10 coins, talk to the Pianta near the boathouse, you can go to Delfino Airstrip, and it will use the Delfino Plaza music instead of Underground theme remix from where we first arrived at Delfino Airstrip. There is a Shine Sprite at Delfino Airstrip, and it is the 8 Red Coins, and you will need the Turbo Nozzle for this one, this one isn't too difficult, and you can get a Shine Sprite in Delfino Airstrip, and it only has one Blue Coin, you have to spray an ice cube to get it.
Then it is time to collect 100 coins in Delfino Plaza, you can use the sewers, which are a good way for collecting coins, or you can visit Delfino Airstrip and collect some coins until you go up to 100, and Delfino Plaza is one of three courses where you can collect up to 999 coins, I don't know if you want to count Delfino Plaza as a course, as it is the hub world of this game, the other two courses are Pinna Park and Sirena Beach. With about every Shine Sprite in Delfino Plaza collected, there is still the Blue Coins and Corona Mountain left.
