All-Star Mode does not allow customization, including custom moves, and the character I use next is Palutena, a character with different custom moves, so she is stuck with her default custom moves. Going over her Alt. Trophies, in the 3DS version, it uses her 8th alternate costume, while the Wii U version uses her 6th alternate costume.
In All-Star Mode, you deal more damage to opponents, while you take less damage and knockback from your opponent's moves, with stage hazards being the only thing that can end your run on All-Star Mode. Palutena does have some good KO options, her up smash is the best she has, she can use her forward smash to KO opponents, and while she does have some projectile moves, they are more about getting in damage from a distance.
I will go over All-Star Mode and which characters you fight against.
Round 1 (2015-2007): Corrin, Greninja, Lucina, Robin, Dark Pit, Shulk, Bayonetta, Wii Fit Trainer, Rosalina & Luma
Round 2 (2006-2001): Lucario, Lucas, Ike, Zero Suit Samus, Toon Link, Bowser Jr., Roy, Olimar, Villager
Round 3 (1998-1994): Ganondorf, Sheik, Cloud, Jigglypuff, Charizard, Pikachu, Mewtwo, Diddy Kong, Ness
Round 4 (1993-1991): Meta Knight, Falco, Fox, Wario, King Dedede, Kirby, Sonic
Round 5 (1990-1986): Captain Falcon, Yoshi, Dr. Mario, Marth, Mega Man, Ryu, Palutena, Pit
Round 6 (1986-1984): Samus, Zelda, Link, Bowser, Peach, R.O.B., Duck Hunt Duo
Round 7 (1984-1980): Little Mac, Luigi, Donkey Kong, Mario, Pac-Man, Mr. Game & Watch

Like I went over with Pit in the previous part, they could of had Skyworld appear for 1990-1986 instead of 2015-2007, as I see Skyworld as more of a home stage to Pit, but then again there are two Kid Icarus stages in this game, and the only other stage is one of the largest stages in the game, so that couldn't appear in All-Star Mode. In the 3DS version, the stages where you would fight Palutena and other characters that debuted in 1990-1986 are Yoshi's Island, Mute City, Reset Bomb Forest, Wily Castle, and Suzaku Castle, and in the Wii U version, the stages are Port Town Aero Dive, Woolly World, Yoshi's Island from Melee, Wily Castle, and Suzaku Castle.
Palutena's Final Smash Trophy has her unleashing Black Hole Laser on Fox and Toon Link, and I did read that the laser fired deals more damage to fighters that are caught in the black hole, this Final Smash is good for free-for-all matches, as the laser can even hit opponents not in the black hole.
