"Easy Chicken Nanban"

■Ingredients (Serves 2)
・1 chicken thigh (250g)
・1 egg
・Cake flour (as needed)
・Salt and pepper (a pinch)
・3 tablespoons vegetable oil
☆Tartar sauce
・1 boiled egg
・1/4 onion (50g)
・Salt and pepper (a pinch)
・3 tablespoons mayonnaise
・1 tablespoon lemon juice
★Combined seasonings
・2 tablespoons sugar
・2 tablespoons vinegar
・2 tablespoons soy sauce

■Procedure
(1) Finely chop the onion, soak in water, and drain.
(2) Add the ★ ingredients to a bowl and mix (Combined seasonings).
(3) Place the boiled egg in a bowl and mash with a fork. Add the remaining ☆ ingredients and mix (Tartar sauce).
(4) Cut the chicken into bite-sized pieces and sprinkle with salt and pepper on both sides. Coat the chicken all over with flour and then dip in beaten egg.
(5) Heat salad oil in a frying pan, add the chicken, and fry over medium heat until golden brown. Turn over, cover, and cook over low heat for 4 minutes until the chicken is cooked through.
(6) Wipe off excess oil from the pan with kitchen paper, add the ingredients marked ★, and simmer until slightly thickened.
(7) Serve in a serving dish and pour over the tartar sauce.
