Biko belongs to a category of sweets called kakanin, which is made up entirely of rice cakes.
1 kilo glutinous rice
2 cups coconut milk
1 cup brown sugar
1 cup langka / sliced into strips
Procedure:
1. Rinse glutinous rice until clear. Add 4 ½ cups water. Cook for about 10-15 minutes or just half-cooked.

3. In a pot add brown sugar and stir until sugar is dissolved.
4. Add 2 cups coconut milk and stir. Scoop some latik for the toppings
5. Add half-cooked glutinous rice. Cook in low heat while stirring con stantly.
6. Add langka. Continue cooking until the rice fully absorbs all the liquid.
7. Transfer to a tray and flatten
8. Top with Latik
Serve warm and enjoy!
