Undead Burg is a weird area. It's linear in a very obvious sense, with very little left to the imagination. The second half is a little more annoying to manage, especially without pyromancies, which can really damage foes this early on.
So, let me explain the Undead Merchant and his offered wears.

Repair Powder: 500 souls each
Restores 100 durability to whatever is in your right hand. Pretty good if you don't want to get the repair box yet, but cannot repair armor.
Throwing Knife: 10 souls each
A decently powerful item, useful to draw enemies near and kill the weakest.
Firebomb: 50 Souls each
A moderately powerful AoE explosion. Perfect for cleaning up small grounds.
Lloyd's Talisman: 500 souls each
Estus sippers wearing you down? Throw one! Not recommended... they're not very useful outside PvP... that is, if you're the invader, since invaders themselves cannot use estus.

Residence Key: 1000 souls
Frees the sorcery trainer and gives access to 3 Gold Pine Resin items.
Repair Box: 3000 souls
Lets you repair items for a fee at any bonfire. Very useful when using low-durability tools.
Bottomless Box: 1000 souls
Hate all that clutter? Buy this and organize your wares.

Dagger: 300 souls each
Starting weapon of the sorcerer, and a pretty nifty weapon for backstabs and parries alike.
Shortsword: 600 souls each
A decently powerful tool with great versitility and lacking range.
Scimitar: 600 souls each
Wander's starting weapon. No kick, but attacks quickly and powerfully.
Rapier: 600 souls each
Powerful, annoying and deadly in the right hands. Stab from behind your block!
Hand Axe: 450 souls each
Starting weapon of the Pyromancer, this silly weapon is good for Strength builds and lumberjacks.
Club: 150 souls each
Starting tool of the Deprived. Scales strong with strength, but you are staggered on a miss.
Reinforced Club: 350 souls each
A club, but inflicts 300 bleeding. After 4 hits an enemy loses 30% max HP. A powerful tool, but not durable or swift.
Spear: 600 souls each
A weapon that allows you to attack from behind your shield or from a moderate distance.
Short Bow: 1000 souls each
A must have for many classes as it allows one to snipe and lure any desired target. This is the first time one can purchase one of these fine tools.
East-West Shield: 400 souls each
A weak but cheap shield.
Buckler: 800 souls each
A longer parrying window makes this perfect for experienced fencers. It's ability to block is lacking, though.
Leather SHield: 800 souls each
Light, but save an extra 200 for the Heather shield.
Heater Shield: 1000 souls each
A must have for those that like to block and get close and personal with their foes. It stops 100% physical damage on a block!
Warrior's Round Shield: 800 souls each
A fine shield, but not really worth the souls.

Standard Arrow: 10 souls each
It hurts, it flies and perfect for a quick snipe.
Large Arrow: 50 souls each
Less range, but hurts like a broken heart.
Wooden Arrow: 3 souls each
Cheap and perfect for luring enemies and foes.
Standard Bolt: 30 souls each
Powerful but rather expensive.
Heavy Bolt: 100 souls each
Less range, but powerful as one wishes it to be.
Wood Bolt: 10 souls each
Pelt them with splinters.

Chain armor:
Helm, gauntlets and leggings 500 each
Body armor 800 souls each
OR 2300 souls per set
A perfect light armor set, with decent point and protection. A must have for poorly armored starting classes.
