Frying an egg over-medium creates a fried egg with a combination of textures within the yolk—part cooked and part liquid. Fried eggs can be served as a breakfast food or may be added to sandwiches and burgers.c 

Ingredients and Equipment
---------------------------------------------------------------------

Ingredients

* 1 egg
* 1 to 2 tbsp butter
* Salt and pepper, if desired

Equipment
* Skillet
* Burner
* Flat surface
* Spatula or turner
* Serving plate

Instructions
---------------------------------------------------------------------

1. Melt the butter in the skillet over low heat. Tilt the pan or spread the butter with the spatula to coat evenly.
Crack the egg on the flat surface and slowly open it into the pan. Increase heat to medium.3. Allow the egg whites to cook until solid around the egg.  
4. Flip the egg to cook on the other side. Cook for about 60 seconds.
5. Remove the skillet from heat. Tilt the pan to allow the egg to slide out and onto the serving plate. Serve.

Tips and Suggestions
---------------------------------------------------------------------

* Be careful not to break the yolk when cracking the egg.
* Generously grease the pan to prevent sticking.
* Tilt the pan and wiggle the spatula when picking up the egg to turn.
* Check the yolk for doneness, looking for part solid and part liquid.
* Serve with
breakfast or add to a sandwich.
