Here is the start of the Gym Leader Castle in Pokémon Stadium 2. This is like how Gym Leader Castle was in the first game, where you had three opponents and them the Gym Leader was the final opponent, in this game, Gym Leader Castle would have about one or two Trainers for each Gym, and then the Gym Leader is the last opponent you take on.
To start it off, the Violet Gym is the first one, and there is only one Trainer before the battle with Falkner, the Gym Leader and a specialist on Flying-type Pokémon, and this one is really easy, pick some good Electric, Ice, or Rock-type Pokémon that can help in those battles. The team I selected for this one were Pikachu, Voltorb, Jynx, Electabuzz, Zapdos, and Sudowoodo, as those are the ones that have the best moves to take on Flying-type Pokémon.
I will list each Trainers, and the nicknames of the Pokémon, with the species name of the Pokémon in brackets, as well as their held item.
Battle 1: Bird Keeper Matt
Pidgash (Pidgey): Fly, Agility, Quick Attack, Swift (Berry)
Hootash (Hoothoot): Peck, Foresight, Confusion, Flash (PSNCureBerry)
Spearash (Spearow): Fly, Agility, Fury Attack, Mirror Move (Ice Berry)
Natuash (Natu): Peck, Leer, Endure, Flash (Mint Berry)
Doduash (Doduo): Peck, Agility, Fury Attack, Tri Attack (Bitter Berry)
Pidgeoash (Pidgeotto): Gust, Agility, Quick Attack, Swift (PRZCureBerry)

Battle 2: Gym Leader Falkner
Pidgeot: Fly, Mud-Slap, Quick Attack, Whirlwind (PRZCureBerry)
Farfetch'd: Fly, Slash, Mud-Slap, False Swipe (Stick)
Noctowl: Fly, Confusion, Take Down, Mud-Slap (Mint Berry)
Delibird: Present, Mud-Slap, Headbutt, Blizzard (Bitter Berry)
Fearow: Drill Peck, Mud-Slap, Mirror Move, Swift (Sharp Beak)
Togetic: Fly, Double-Edge, Psychic, Fire Blast (Burnt Berry)

I will be including held items in the brackets if Pokémon have them, and this might be the best time to explain about what each Berry does, because this is Generation 2, and they had different names to the ones from Generation 3 onwards. Berry heals 10 HP when the Pokémon's HP goes below 50%, PSNCureBerry cures poison if you couldn't tell by the name of the Berry, while PRZCureBerry cures paralysis, Ice Berry cures burn, Mint Berry cures sleep, Bitter Berry cures confusion, and Burnt Berry cures freeze. At the first few battles, you can see Pokémon holding Berries of different types, the first opponent is very easy as he has mostly Flying-type Pokémon with weak attacks like Gust, Peck, and many moves. Gym Leader Falkner has Mud-Slap on all of his Pokémon, with the exception of Togetic which has some powerful moves like Double-Edge, Psychic, and Fire Blast, Mud-Slap on most of his Pokémon can make it more trickier, as Mud-Slap reduces accuracy and deals super effective damage against Electric-type Pokémon. His Farfetch'd has the Stick, this is an item that only Farfetch'd can make use of, and it increases its critical hit rate, the item was renamed to Leek in Generation 8. Fearow has the Sharp Beak, this item increases the power of its Flying-type moves by 10%, it was not 20% back then, items that boost the move types were 10% back then. Falkner will always use Pidgeot in the battle, and he shouldn't be too hard, and if any of his Pokémon use Fly, you can hit then with Thunder for double damage.
