This one was really tough, because I will be using Rock-type Pokémon for Restricted Sparring, and what makes this tough is that Rock-types tend to have a lot of weaknesses, and the types they are weak to are very common types, and a lot of Rock-types are on the defensive side, and that is a huge problem with how many weaknesses Rock-types have.
I did have a failed attempt, because I had to fight a Lilligant as my first opponent, which used Quiver Dance and Giga Drain, and it took down my Gigalith, and the next Pokémon I had to fight was Whiscash, and all I had left was my Coalossal, which was at low HP, and Whiscash was faster, so there was no hope for that fight.
For the team I went with, I chose Gigalith to lead the fight, he has Sand Stream, and the Assault Vest helps Gigalith take Special Attacks well with the 50% boost to Special Defense in the sandstorm. For his moves, I went with Rock Blast, as I find that to be more reliable than Stone Edge when it comes to Accuracy, and for coverage moves, Iron Head, Earthquake, and Superpower fill in Gigalith's moves very well.
Next up is Coalossal, which can Gigantamax, and I gave him the new move Meteor Beam, and with a Power Herb, this will allow Coalossal to unleash Meteor Beam right away, and the Special Attack boost can be good for leading up with that move, and then I can Gigantamax him to use G-Max Volcalith, and with the Special Attack boost, Coalossal can take out opponents without too much difficulty, he does have Steam Engine, so his Speed will be maximized when I swich him in against a Fire-type move.
The last one of the team is my Dusk Form Lycanroc, she has a Focus Sash, possibly the best item I could give her, as Lycanroc isn't that defensive of a Pokémon. She has Stone Edge and Close Combat for powerful moves, Accelerock for priority, and Play Rough for a coverage option against Fighting and Dragon-type Pokémon.
While Gigalith, Coalossal, and Lycanroc fill in the team very well, well Coalossal was the best I could go for a Special Attacker, since the majority of Rock-type Pokémon are either Physical Atackers or straight up defensive Pokémon. Tyranitar is an alternative over Gigalith, as it also has Sand Stream, and the sandstorm is beneficial for the 50% Special Defense boost on Rock-type Pokémon.
For other good Rock-type options, some choices include Rhyperior, Lycanroc, Terrakion, and a few others, there aren't too many good Rock-type options, because for good ones, Tyranitar and Coalossal are one of few that are good enough.
I will list some other choices, they might not be the best, but they could work well in battle, like Crustle, Solrock, Lunatone, Sudowoodo, Shuckle, Barbaracle, Drednaw, Stonjourner, and a few others. Rock is a very limited type when it comes to what good Pokémon there are in this game, and I'm sure The Crown Tundra will bring over some Rock-type Pokémon from previous games, I heard that some of the Fossil Pokémon will be returning, like Cradily, Tyrantrum, and a few others, and I did see that Aggron is returning, even if it hasn't ever been that good in the competitive scene with its Steel/Rock-type that has held it back because of its 4x weakness to Ground and Fighting. They did confirm that almost every Legendary Pokémon will be returning, so for Rock-types, that means Regirock is one of few to be included in The Crown Tundra update, so this will add some new options for different types.
