Finally, the section of the game which earned the "T" rating for the game! As a child the catacombs were responsible for giving me many nights of nightmares as the hellish wailing of trapped souls in the walls as well as the disembodied organs adorning the walls thoroughly disturbed me. In Iceland the game had no rating system yet so we didn't know. Probably wouldn't have cared anyways. By the time I completed the game years later I felt different about the catacombs but they are still weird.
With that being said, acquiring the "Eadhay of the Avigatornay" was one of the big sticking points for me progressing through the game. Stan turns out to have given you the answer to both of the two issues I got stuck on. After giving the correct item to the Cannibals they are willing to give you the Head which can then lead you through the catacombs. If you haven't yet then give Herman back his banana picker also so you can get the key to the Great Monkey Head.
After opening the Monkey Head by swabbing his ear proceed underground and ask the Head for help. His directions can be inconclusive so worst case scenario is that you get sent back to the start of the catacombs and then have to start over again. After successfully following his directions though Guybrush ends up at the overlook where the cutscenes have shown LeChuck's ship several times throughout the game. If you go onto the ship Guybrush will be quickly chased off by the pirates.
In order to proceed it is necessary to talk to the head and convince him that he does not need his magical necklace but instead Guybrush does. After getting it and using it, it is safe to enter the ship.
On the ship, head left to LeChuck's cabin and see the familiar location of many a cutscene. Use Stan's compass to steal the key and then head below deck. Try to pick up a ghost chicken in the second room and then return to the first to tickle the sleeping crewman's feet with the feather you just nabbed. Grab his grog and then return to the pen. Open the padlock with the key from LeChuck's cabin and then feed the rats the grog in order to knock them out. Grab some grease and head above deck.
Grease the squeaky door and head inside to find another sleeping ghost as well as the door to the brig and some tools. Grab the tools, head back to the pens, and use the tools to grab the voodoo root from the glowing crate. Leave the ship and be whisked away to the cannibals' village. The cannibals make you root beer and then leave the village to be whisked back to the ship.
The dialogue choices here determine if Guybrush sprays Bob the pirate with root beer or not and then he leaves back for Melee Island with Herman if the Sea Monkey was sunk or with the crew if it wasn't.
