In general I've found the level scaling to work surprisingly well in Skyrim, but it should be said that my approach was a bit unorthodox since I abandonded my primary weapon and armor skills at a very high XP level (...and thus might have experienced a quite welcome difficulty spike at around level 40 and above which the average player probably won't see in his or her game). Some enemy types become incredibly easy (most notably the regular dragons), but even common bandits are clearly made much (but not *too* much) stronger as the player's level increases and Elder/Ancient Dragons certainly have a way of keeping you on your toes...
