I use Ganondorf in this video, and he is one of many characters that has an easy time with All-Star Mode, even on Hard difficulty, this is because your attacks do more damage to the opponent, and with one Warlock Punch, if you can land that, it can instantly defeat anyone in one attack, Ganondorf has some very powerful smash attacks, and as he is a heavyweight character, he benefits from the less and knockback he receives from opponents, well anything that isn't a stage hazard, Ganondorf can stay in battle, even at higher percentages.
As with his Alt. Trophies, the 3DS version uses his 8th alternate costume, the Wii U version uses his 5th alternate costume, and he made his debut in The Legend of Zelda: Ocarina of Time, so he appears as an opponent along with other characters that debuted in 1998-1994.

For a list of stages you would fight against Ganondorf and other characters that debuted in 1998-1994, in the 3DS version, the stages are Spirit Train, Unova Pokémon League, Magicant, and Midgar, and in the Wii U version, the stages are Kongo Jungle 64, Bridge of Eldin, Pokémon Stadium 2, Onett, and Midgar, and as I went over with Sheik, there are only two stages from the Legend of Zelda series in the 3DS version, and three in the Wii U version, Hyrule Temple does not appear in All-Star Mode, while Hyrule Castle and Pirate Ship were not in the base game.
For Ganondorf's Final Smash Trophy, it shows him transformed into Beast Ganon, and while it is the same Final Smash in Ultimate, the Final Smash in Ultimate is called Ganon, the Demon King, which uses Ganon's appearance in Ocarina of Time, while Ganon uses his appearance from Twilight Princess in this game.
