I use Rosalina & Luma in this video, and I go through All-Star Mode with them. Rosalina is one of the more recent characters in video game debut, she first appeared in Super Mario Galaxy, which released in 2007, so she appears along with other characters that debuted in 2015 to 2007. As with her Alt. Trophies, in the 3DS version, Rosalina uses her 5th alternate costume, that is her red alternate costume, which could be a reference to Fire Rosalina in Super Mario 3D World, and in the Wii U version, she uses her white alternate costume, which is the colour scheme for Fire Peach, although the first thing that comes to my mind is the White Mage from Final Fantasy for that alternate costume, and that is Rosalina's 8th alternate costume.
In All-Star Mode, you take less damage and knockback from opponents, and you deal more damage against opponents, the nice thing about using Rosalina is that most of Luma's moves have good launching power, this can be good for getting easy KOs, the downside is Rosalina is one of the lighter characters in this game, she has to be very wary of stage hazards, like the F-Zero Machines on Port Town Aero Dive, as stage hazards keep their regular knockback.
I will go over All-Star Mode and which characters you fight against.

Round 3 (1998-1994): Ganondorf, Sheik, Cloud, Jigglypuff, Charizard, Pikachu, Mewtwo, Diddy Kong, Ness
Round 4 (1993-1991): Meta Knight, Falco, Fox, Wario, King Dedede, Kirby, Sonic
Round 5 (1990-1986): Captain Falcon, Yoshi, Dr. Mario, Marth, Mega Man, Ryu, Palutena, Pit
Round 6 (1986-1984): Samus, Zelda, Link, Bowser, Peach, R.O.B., Duck Hunt Duo

Rosalina is fought in the first round in the Wii U version, while she is one of your opponents in the final round in the 3DS version, and her home stage Mario Galaxy does appear when you fight her and other opponents that debuted in 2015-2007, in the 3DS version, the stage Rainbow Road is one of the stages that can appear, the stage is based on Rainbow Road from Mario Kart 7, and it was not brought back to Super Smash Bros. Ultimate, likely because Mario Circuit also has you riding on a platform moving around the track, I did like the Rainbow Road stage from 3DS, it was one of my favourite stages in that game.
The other stages that can appear when fighting Rosalina and other characters in the Wii U version aside from Mario Galaxy include Kalos Pokémon League, Coliseum, Skyworld, Wii Fit Studio, Gaur Plain, or Umbra Clock Tower, in the 3DS version, the following stages are Rainbow Road, Prism Tower, Arena Ferox, Gaur Plain, or Umbra Clock Tower.
Completing All-Star Mode with Rosalina gives you the Trophy for Power Star, her Final Smash, and for the Trophy, it only shows Rosalina & Luma, no other characters are present, and I do like how her Final Smash was changed to Grand Star in Ultimate, and that she summons a Grand Star instead of a Power Star in that version, and this Final Smash is really good on smaller stages, that way you can trap your opponents in the Power Star to get in as much damage as you can before it explodes.
