I use Bowser to go through All-Star Mode, and in this one, I play on Hard, because Bowser is one of the best characters to use when going through All-Star Mode on Hard. This is because you deal more damage to opponents, and Bowser being a heavyweight powerhouse can get in some huge damage for easy KOs, and as you takes less damage and knockback, with the exception of stage hazards, this means Bowser can last throughout a fight, even if he has over 100% damage taken, provided that he doesn't get launched by any stage hazards, which keep their normal knockback.
Like with Peach, Bowser also debuted during 1984-1986 in Super Mario Bros., and going over his Alt. Trophies, in the 3DS version, Bowser uses his green alternate costume, that is his 4th alternate costume, and in the Wii U version, Bowser uses his red alternate costume, that being his 7th alternate costume.
I will go over All-Star Mode and which characters you fight against.
Round 1 (2015-2007): Corrin, Greninja, Lucina, Robin, Dark Pit, Shulk, Bayonetta, Wii Fit Trainer, Rosalina & Luma
Round 2 (2006-2001): Lucario, Lucas, Ike, Zero Suit Samus, Toon Link, Bowser Jr., Roy, Olimar, Villager
Round 3 (1998-1994): Ganondorf, Sheik, Cloud, Jigglypuff, Charizard, Pikachu, Mewtwo, Diddy Kong, Ness
Round 4 (1993-1991): Meta Knight, Falco, Fox, Wario, King Dedede, Kirby, Sonic
Round 5 (1990-1986): Captain Falcon, Yoshi, Dr. Mario, Marth, Mega Man, Ryu, Palutena, Pit
Round 6 (1986-1984): Samus, Zelda, Link, Bowser, Peach, R.O.B., Duck Hunt Duo
Round 7 (1984-1980): Little Mac, Luigi, Donkey Kong, Mario, Pac-Man, Mr. Game & Watch

As for the stages you fight Bowser on, along with Peach and the other characters in 1984-1986, in the 3DS version, you fight them on Golden Plains, Mushroomy Kingdom, Gerudo Valley, Brinstar, Peach's Castle (64), Hyrule Castle (64), or Duck Hunt, in the Wii U version, you fight them on Mushroom Kingdom U, Mario Circuit (Brawl), Skyloft, Norfair, Duck Hunt, Wrecking Crew, Peach's Castle (64), or Hyrule Castle (64), the reason for 64 in brackets is to tell that they are from Super Smash Bros. 64, and Mario Circuit (Brawl) to tell apart from Mario Circuit, although it was renamed to Figure-8 Circuit in Super Smash Bros. Ultimate.
You get the Trophy for Giga Bowser, which was nerfed in this game, while it was a temporary upgrade to Bowser in Brawl, in this game, Giga Bowser fights like how Bowser used to fight in previous Smash Bros. games, making him less powerful, although the super armour can help for most of it. With the Trophy for Bowser's Final Smash, he is shown using it against Peach and Mario, and despite the Trophy description saying it deals extra damage, the Final Smash was nerfed in this game, and I do like how they changed Bowser's Final Smash in Ultimate where he goes into the background and launches a punch at the opponent.
