Taylor Sinclair's Oaxacan Cookies
2/3 cup Bittersweet Chocolate Chips
¾ cup All-purpose Flour
¼ tsp. Cinnamon
1 tsp. Instant Coffee (Optional)
¼ tsp Baking Powder
¼ tsp Salt
Pinch Cayenne Pepper
1 ¼ cups Sugar
4 Tbsp Butter, softened
1 Egg
1 tsp. Vanilla Extract
Marshmallow Fluff
Melt chocolate and set aside to cool. Combine flour, sugar, coffee, cayenne, cinnamon, baking powder, and salt. Stir in chocolate, butter, vanilla, and egg. Spoon cookie dough onto a baking sheet and bake at 350° for 10 minutes. Cool cookies completely and sandwich together with a spoonful of marshmallow fluff.
