Complete Pizza Degreasing Tutorial
https://www.patreon.com/ulillillia --- Degreasing pizzas is something I've done for around 20 years. I've gotten very efficient at it. I will explain how to best go about doing it. This method applies to ordered pizzas. The frozen ones are processed differently and will be done in a later video.
First, you need a pizza (from any pizza restaurant, not just Domino's), a fresh one that you just ordered. Second, you'll need a sturdy absorbant medium and paper towels work very well. Do not use napkins or other very thin stuff - those are only good for wiping your hands off on. Very cheap paper towels aren't as worthwhile, but are borderline acceptable.
Although degreasing works best when the pizza is very warm, it cannot be too warm or the cheese will stick to the paper towel. Let it cool a bit first, something like 5 minutes. Also, there is a diminishing return. If 1 unit of time soaks up 1 unit of grease, then 4 units of time soaks up 2 units of grease, 9 units of time soaks up 3 units of grease, and so forth. Unlike pretty much all of the testing I've seen, I don't do just a quick dab. I go into a lot of detail and I even have multiple stages.
At first, the degreasing is really intense so a double-layered paper towel is more efficient for speed and time. That is, instead of using 2 paper towels to cover the portion of the pizza, you'd use 4 and have them folded over to make them twice as thick. After 2 or 3 full rounds of doubled thickness, use single thickness. After about 4-6 rounds, I begin to focus on the worst areas, where you can see the glint from the grease. I use single paper towels for this and soak up the grease using dabs focused on those areas. I also get along the cuts between the slices. Once this is done, I either go to stage 2 if I have no other pizzas, or, if I do, I lay paper towels on the pizza to continue soaking up the grease until ready to eat. Once that's done, I go to the next pizza or, if none remain for stage 1, I choose the one I want to eat then goo to stage 2.
Stage 2 is processed for every slice. I put the slice upside-down on a pair of paper towels and apply a medium-high pressure. If the back side is greasy, I use a single paper towel to fit over it to degrease this. I then repeat for a second run, using the back side degreasing routine if I feel it's necessary. After this, I use the sides with a medium-low pressure to get in the area where the cuts for the slices are. It's only then that I begin eating it, but if I see an unusually greasy area, I just do quick dabs.
I'd love to know how much of a caloric reduction this extensive system really yields. I generally know how to run the experiment, but I don't have the equipment. I was hoping Mythbusters would test it, but they're going away.
This was recorded using my 10.5 mm f/0.95 lens and using ISO 200, f/2.8, and 1/60 second shutter with a 0.6 dynamic range exponent so what you see better matches what the eye really sees.
