It's not uncommon for newer players to complain about crit fishing in general, usually because of how it can instantly end a fight. However backstabs and parries aren't free and in most cases won't finish a fight by itself. It's almost always a combination of landing some damage and then the crit or landing the crit and then a chase down. Sure every now and then there is just an insanely good read that leads to a very early victory but almost always there are many actions that preceded it and that will follow it. Getting one shot by a single crit really only happens when the crit fisher has an optimized build and their opponent has notably low vigor/defenses.
