Well, the blood moon is certainly affecting the folks at the chapel strangely, but whatever happened to Eileen? Well I'm pretty sure this would be the bad ending to this quest line.

You can't summon for it obviously so you're on your own. The enemy attacks very quickly so go with a quicker weapon yourself. If you want to make this fight much easier, simply run and leash them. They won't defend when they're back stepping a lot of the time.

If you want to do it legitimately, good luck. I got it to 20% numerous times only to be stun locked fro 100% to 0 in 1 combo. Viscerals only do around 400 damage without the damage boost rune. Yikes, so quick stepping and getting in a hit or 2 really speeds up the process.
