The tall dragons (Zaltys and Zomok) both have similar strategies. Breaking the tail isn't necessary, BUT some of the spell drops won't happen unless you DO give them anal probes. So why not do everything you can do to bust these guys up?

I always run with thundara hits on their head to make them stagger, it just makes sense seeing as their heads are so vulnerable to stagger. Can't remember if other spells work or not, but it's beside the point as thunder is the fastest projectile magic. Once it is lying down just stab it in the head for a 2nd easy stagger.

Do note that further hits while it is down are really only effective against the head - try not to cut off it's tail and start wailing on its butt as it won't work quite as well. I find Evade is necessary if you don't want to waste an overclock - running around it's body all the time can be a waste of time. It's just a bit of a shame Evade is hard to control the direction.

Alternatively, if you don't mind using an Overclock, just pop it and walk around to the tail, smack it off, then walk back around to the front.
