Shrimp & Grits with Lemon Butter from Nancy Drew: Ghost of Thornton Hall
In our family, we always eat shrimp for New Year's. Not for luck, but for the fact that we love shrimp. Still, we suspect you'll be feeling lucky when you try today's recipe yourself.
Shrimp & Grits with Lemon Butter
4 cups Chicken Broth
1 cup water
1¼ cups Grits (not instant)
6 Tbsp Butter, divided and softened
1¼ cups shredded Cheddar Cheese
1 lb Shrimp
½ lb Bacon, chopped
5½ tsp. Lemon Juice, divided
4 Tbsp minced fresh Parsley
½ cup sliced Green Onions
4 cloves Garlic, minced
½-¾ tsp. Cajun Seasoning
1 tsp. fresh Lemon Zest
Bring the broth and water to a boil. Add the grits and reduce heat to a simmer, then cook for 20-25 minutes or until done. Stir in 2 Tbsp butter and the cheese and set aside.
Meanwhile, fry the bacon in a large skillet until done. Set aside and add the shrimp and any bacon drippings to the skillet. If using thawed frozen shrimp, also add any liquid that thawed from them. Cook the shrimp until they are almost pink, then add 4 tsp. lemon juice, green onions, 3 Tbsp parsley, garlic, and seasoning. Cook for several more minutes. Beat the remaining 4 Tbsp of butter with the remaining 1 Tbsp parsley, 1½ tsp. lemon juice and the zest.
Serve the shrimp over a bowl of grits with the lemon butter on the side to add as needed.
