This is another fight that begins with a steep difficulty hurdle. Koishi's main gimmick is her ridiculously high EVA, though like her playable incarnation, she has dangerous VOI element attacks that can't be defended against too. The only ways to hit Koishi are to rely on attackers with high ACC modifiers (like Sakuya or Alice) or to straight up use characters with no miss attacks. Since I already did the research myself, here are your potential options:

Maribel (Liberated Abilities. VOI Element)
Satori (Brain Fingerprint. MYS Element)
Sanae (Bright Guest Stars. SPI Element)
Tenshi (Sword of Hisou. SPI Element)

Shou is probably the best for the job. Everyone else targets an element Koishi resists or Koishi's stronger defensive stat, MND. Shou's Hungry Tiger targets an element Koishi is neutral to and targets DEF, her weaker defensive stat. I used high level gear from the Infinite Corridor to boost Shou's attack, but if you don't have that and don't mind using a Tome of Reincarnation, you can probably use special items on Shou, just for this fight and get those items refunded afterwards

Patchouli (Royal Flare, FIR, +60 ACC)

Sakuya (Killing Doll, DRK, +50 ACC. Note that Sakuya already has Soul Sculpture)
Kokoro (Invigorated Kagura Lion, PHY +48 ACC)
Kasen (Higekiri's Cursed Arm, DRK, +40 ACC)

(If you're going to use a high ACC attacker, I'd recommend making use of any available synergies as well as Momiji's ACC boosting passive)

For my party, I technically had Sanae available but I didn't want to use her for attacking and her No Miss attack is SPI element anyway, so I gave Shou a much needed glow up. Once Koishi's dead, all you really have to worry about is Satori.

Satori technically also has a gimmick; she has her skill copying ability. Unlike playable Satori, she's only limited to copying the first two skills of every character, though she also isn't limited to whoever's in the active party; she can throw out anything from Rinnosuke's first aid to Eiki's Last Judgment. While some luck is probably involved, Satori is only one character, and she's one character especially susceptible to debuffs, so she's not too terribly hard.
