Black Forest Cake

2 cups Flour
2 cups Granulated Sugar
¾ cup Cocoa Powder
2 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Salt
½ cup Vegetable Oil
1 cup Buttermilk
1 cup Hot Water
2 large Eggs
2 tsp. Vanilla
2½ cups Cherries, halved (if using frozen, thaw & save juice)
3 cups Heavy Cream
½ cup Powdered Sugar
1 bar Semisweet or Dark Chocolate

Mix together flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt. Beat in the oil, milk, eggs, and vanilla, then slowly mix in the hot water. Mix well. Oil two round baking pans and dust with cocoa powder, then divide the batter evenly between them. Bake at 350° for 45 minutes or until done. Cool for 10-15 minutes, then remove from the pans and finish cooling completely. Beat cream and powdered sugar together until whipped and set aside. Slice each cake layer in half horizontally, then brush each cake layer with the reserved cherry juice if using frozen cherries. Place the first layer on a large plate. Spread with about 1 cup whipped cream and 1/3 of the cherries. Repeat with the remaining layers. Frost the outside of the cake with most of the remaining whipped cream. Shave the chocolate and sprinkle across the top of the cake, then top with dollops of whipped cream and a cherry on top of each dollop.
