Yumi's Bento Box
3 Eggs
1½ cups cooked Sushi Rice
6 slices bread
Soy Sauce &/or Beet Juice
3 slices Sandwich Ham
3 slices White Cheese (such as Provolone)
1 sheet Toasted Seaweed
Rice Ball Fillings (optional)
Mayo or other condiments as desired
Pig, Cat, Bear, or Bunny egg molds
Eggs: Hardboil the eggs and peel immediately while still hot. Press into the molds and snap shut, then place in a bowl of ice water to chill. To color the eggs, soak in or brush with soy sauce or beet juice.
Rice: For a filled rice ball, dip the mold in water, then press rice inside- making sure to leave a hollow in the middle. Fill the hollow with any desired fillings, then press mold shut firmly. Remove rice ball and use bits of seaweed cut into shapes to detail the faces. For an unfilled rice ball, repeat the above process but don't create a hollow.
Sandwiches: Press a piece of bread snugly into each side of the mold. Fill the middle with meat, cheese, and any desired condiments. Remove from mold and use seaweed, meat, and cheese to create faces.
