Have you tried Muhammara?!

It’s a classic middle eastern dip and one of my favorite dishes both visually and when it comes to taste!

Ingredients:

•1-2 heads of garlic, top cut off
•Salt and pepper
•Olive oil, needed for multiple steps
•2-3 red bell peppers
•1/2 cup toasted walnuts, divided
•2 tbsp tomato paste
•1/2 cup bread crumbs
•2 tbsp pomegranate molasses
•1 tsp sumac
•Salt and pepper to taste
•Cayenne (optional)
•Pita bread

Preheat the oven to 400F and season/ wrap the garlic as shown in the video. Place the foil wrapped garlic in the oven to roast for 30-40 minutes. This can be made ahead of time.

In the meantime, cut and core out the red peppers, and place them on a foil lined baking sheet skin side up. Brush the top with olive oil and roast for 30 minutes or so, turning after 20 minutes.

When the peppers are done, let them cool slightly before careful peeling off the skin. Grab a blender and add the red peppers, one head of roasted garlic, 5 tbsp olive oil, 1/3 cup of toasted walnuts, tomato paste, breadcrumbs, pomegranate molasses, and sumac.

Blend everything together until smooth, then taste for seasoning.

Serve this up in a bowl with Pita, and I like to top it with olive oil, pomegranate molasses, walnuts, and parsley!
