I’ve honestly wanted to make this work for over a year now. After 3 variations on this burger, I’ve finally got it where I want! The Perfect Jalapeno Popper Smash Burger!
For the beef, I used a blend of rib beef and brisket. I usually aim for 80/20. Portion them out into 3-4 oz balls and make sure you put some umph behind it when you smash them!
I went with the same approach the Oklahoma Smash Burger uses, which gives the jalapeños time to caramelize and even melt into the patty! The key is using a mandolin to get very thing pieces! I also seasoned them up with @hardcorecarnivore Jalapeño salt !
For the other toppings, I love using fresh raspberry preserves, formerly I used a raspberry compote, but this works better! I also use a whipped cream cheese for the top bun and it really helps balance out the heat as well as the sweet and savory notes.
Served up on a pretzel bun… this is an amazing bite of food!
