To add non-Steam games to the Steam Deck's Game Mode, you'll need to use the Desktop Mode to add the games manually. Here’s a step-by-step guide:

Step 1: Switch to Desktop Mode
Switch to Desktop Mode:

Press the Steam button - Power - Switch to Desktop.
Step 2: Add the Non-Steam Game to Steam
Open Steam in Desktop Mode:

While in Desktop Mode, open the Steam application.
Add a Non-Steam Game:

In Steam, click on the Games menu in the top-left corner.
Select Add a Non-Steam Game to My Library from the dropdown menu.
Choose the Game or Application:

A window will pop up showing installed applications and games. If your game or application appears in the list, check the box next to it and click Add Selected Programs.

If your game or application is not listed, click Browse to manually locate the executable file (.exe or .sh file). After selecting the file, click Open and then Add Selected Programs.

Step 3: Configure Compatibility Settings (Optional)
Set Proton Compatibility (if needed):

For Windows games, you might need to force compatibility with Proton.
Right-click on the added game in your Steam library and select Properties.
Go to the Compatibility tab, check Force the use of a specific Steam Play
compatibility tool, and select a version of Proton from the dropdown menu.
Step 4: Customize the Game (Optional)

Change Name or Icon (Optional):

If you want to change the game’s name or icon, right-click the game in your library and select Properties.

In the Shortcut tab, you can rename the game or add a custom icon by clicking on the empty box.

Step 5: Switch Back to Gaming Mode
Return to Gaming Mode:

After adding the game, click the Steam icon on the desktop and select Return to Gaming Mode.

Step 6: Launch the Game in Game Mode
Find the Game in Your Library:

Your non-Steam game should now appear in your Steam Library under the "Non-Steam" section.

Launch the game directly from the Steam Deck’s Game Mode.
