Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
- Mini Oreo cookies (for decoration)For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a mini cake pan or line it with parchment paper.
2. In a medium-sized bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
4. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Start and end with the dry ingredients, mixing until just combined.
5. Add the hot water to the batter and mix until smooth. The batter will be thin, but that's normal.
6. Pour the batter into the prepared mini cake pan, filling each cavity about three-quarters full.
7. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cake comes out clean. Remove from the oven and let the cakes cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.
8. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing well after each addition.
9. Add milk, a tablespoon at a time, until the desired consistency is reached. Stir in the vanilla extract.
10. Once the cakes are completely cooled, frost the top of each mini cake with the chocolate frosting. Place a Mini Oreo cookie on top of each cake as decoration.
