Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup buttermilk
- ¾ cup hot water
- 24 Oreo cookies
- 1 batch of your favorite buttercream frosting
- Miniature Oreo cookies, for decoration
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a mini cake pan that has 12 cavities.
2. In a medium-sized bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, whisk together the vegetable oil and granulated sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
5. Stir in the hot water, mixing until the batter is smooth and well combined.
6. Place an Oreo cookie at the bottom of each cavity in the mini cake pan. Pour the batter over the cookies, filling each cavity about 2/3 full.
7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cake comes out clean.
8. Remove the cakes from the oven and let them cool in the pan for 10 minutes. Then, transfer them to a wire rack to cool completely.
9. Once the cakes are completely cooled, prepare your buttercream frosting. Spread a layer of frosting on top of each cake, and stack them on top of each other to create a mini layered cake.
10. Decorate the top of the cake with miniature Oreo cookies or any other desired decorations.
