In this video, we will be sharing with you the traditional and mouthwatering Bhoger Khichuri Recipe, also known as Bengali Khichuri or Khichri Recipe.
Bhoger Khichuri is a popular Bengali dish that is often prepared during special occasions and festivals. It is a wholesome and comforting dish made with a combination of rice, lentils, and an assortment of spices. This vegetarian dish is not only delicious but also packed with nutrition.
Ingredients:
- 1 cup Basmati rice
- 1/2 cup Moong dal (split yellow lentils)
- 1/2 cup Gobindobhog rice (fragrant rice)
- 1/2 cup Mixed vegetables (carrots, potatoes, peas)
- 1/2 cup Cauliflower florets
- 1/2 cup Pumpkin pieces
- 1/2 cup Onion, finely chopped
- 2-3 Green chilies, slit
- 1 tablespoon Ginger paste
- 1 tablespoon Ghee (clarified butter)
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Garam masala powder
- Salt to tasteFor Garnishing:
- Ghee (clarified butter)
- Fried onions
- Cashew nuts
- Raisins
Instructions:
1. Wash the Basmati rice, Moong dal, and Gobindobhog rice together under running water. Soak them in water for 20-30 minutes, then drain and set aside.
2. Heat ghee in a pressure cooker or a heavy-bottomed pan. Add the chopped onions and sauté until golden brown.
3. Add the ginger paste and slit green chilies to the pan. Sauté for a minute until the raw smell of ginger disappears.
4. Add the mixed vegetables, cauliflower florets, and pumpkin pieces to the pan. Stir-fry for a few minutes until they are lightly cooked.
5. Add the soaked and drained rice and lentils to the pan. Mix well with the vegetables.
6. Add turmeric powder, cumin powder, and salt to the pan. Mix everything together.
7. Pour enough water into the pan to cover the rice and lentils. The water level should be about 1 inch above the rice-lentil mixture.
8. Cover the pressure cooker or pan with a lid and cook for 3-4 whistles in a pressure cooker or until the rice and lentils are cooked and soft. If using a pan, cover and cook on medium heat until the rice and lentils are cooked.
9. Once cooked, let the pressure release naturally from the cooker. If using a pan, remove from heat and let it sit covered for 10-15 minutes.
10. Open the lid and give the khichuri a gentle stir. Check for salt and adjust if needed.
11. Serve the Bhoger Khichuri hot, garnished with a dollop of ghee, fried onions, cashew nuts, and raisins.
Enjoy the flavorful Bhoger Khichuri with a side of Bhaja (fried) and Aloo Dum (spicy potato curry).
