I have beaten the Champion and have seen every Pokémon in the Sinnoh Dex, and I talk with Professor Rowan. Then Professor Oak comes and upgrades my Pokédex to the National Dex, unlocking more things in the game, including swarms, the Poké Radar, and many others.

The moment you come downstairs, Mom tells you that Barry went to Snowpoint City, but he can wait. Then talk to Dawn or Lucas in Sandgem Town, and you do get some hints from them, one of them is the elder in Celestic Town, who will show you Palkia in Brilliant Diamond, or Dialga in Shining Pearl, you can do this after beating Cyrus at Spear Pillar, and they will count as seen in your Pokédex.

Talk to Professor Rowan, and after a bit of dialogue, Professor Oak comes and upgrades your Pokédex to the National Dex, then go to Route 221, and Professor Oak will be at Ramanas Park, which I will go over much later on, but you will need Mysterious Shards to trade for slates, you can get Mysterious Shards from digging in the Grand Underground. The moment you leave Professor Rowan's lab, Roark shows up and tells you that you can re-battle the Gym Leaders, I will wait till later for that, as the Gym Leaders are really tough.
As for things you can get, in Hearthome City, talk to Bebe to receive an Eevee, which can evolve into seven different forms, and if you are wondering, Sylveon is not in this game. You can get an Upgrade from Professor Oak at Eterna City, you can get a Metal Coat if you enter the house on Iron Island and talk to Byron. You can get a Capture Charm from the Game Freak and ILCA company, and you get a Diploma for seeing every Pokédex in the Sinnoh Dex, and as for the Swimmer, I will wait till a bit later to talk to him.
