Arriving at Viridian City, I look around and talk to a few people, as well as the PokéMart salesman who gives me a parcel to deliver to Professor Oak back at Pallet Town. Trace then comes back and challenges me to a battle with his Eevee.

The differences between the original Pokémon Yellow and with Pokémon Let's Go is that Jessie and James are in Viridian City, but in the original games, you don't encounter them until the end of Mt. Moon, instead it would be an Old Man who teaches you how to catch a Pokémon.
Partner Play is where you can interact with Pikachu or Eevee, it is a bit like Pokémon Refresh from previous games where you can play and feed Pokémon. You can also dress up Pikachu or Eevee in different costumes.
The Rival Battle at Professor Oak's Lab isn't tough, as Pikachu's Thunder Shock or Eevee's Tackle should defeat their respective counterpart, for example, your Rival has Eevee in Let's Go, Pikachu!, but he will have Pikachu in Let's Go, Eevee!
There is the Rival Battle on Route 22, that battle is optional, but he does have a low level Pidgey which can easily be defeated in one attack. Another thing about Oddish is that Absorb is now a 40 Base Power move instead of 20 Base Power, which is about the same Base Power as Mega Drain in previous games.
Route 22 does have some new encounters, first up is Spearow. Compared to Pidgey, Spearow has higher Attack and Speed, and it comes with Peck, making it a helpful team member against the Bug-types in Viridian Forest. It learns Focus Energy at Level 11, and Fury Attack at Level 16. After evolving into Fearow, it has good Attack and Speed, and it learns Drill Peck at Level 47, so will be stuck with Peck for a long time, you can get the TM for Fly which can be helpful for a while. Through the Move Reminder, which from what I have heard you do not access to until very late in the game, Fearow can learn the Ground-type move Drill Run, giving it extra coverage. Between Spearow and Pidgey, it depends on who you prefer, as Spearow does learn a few Normal-type moves through TM, this should balance out having to deal with Peck until Level 47.
You can encounter both Nidoran Male and Female, I will go through Nidoran Female first. She is the more defensive out of the two Nidoran, and she learn Poison Sting at Level 6, Double Kick at Level 9 which is a good option for the first Gym, she learns Bite at Level 12. When evolved into Nidorina, she gets Toxic at Level 23, Crunch at Level 39, and Super Fang at Level 47. With the Moon Stone, Nidorina can evolve into Nidoqueen, giving her the Ground-type along with her Poison-type. Nidoqueen learns Body Slam upon evolution, and since you get the Moon Stone at Mt. Moon, Nidorina can be evolved right away, meaning you get a strong team member for early on. Nidoqueen has great versatility in TM moves, being able to learn Flamethrower, Thunderbolt, Surf, Ice Beam, Sludge Bomb, Poison Jab, Earthquake and many others. She can learn Superpower at Level 55, even though she will miss out on Crunch if evolved early, her TM movepool makes up for it.
Onto the Male counterpart for Nidoran, what sets him apart from his Female counterpart is that he can learn Horn Attack at Level 12. As a Nidorino, it can get Poison Jab at Level 39, and like with his Female counterpart Nidorina, Nidorino can be evolved into Nidoking as soon as you get the Moon Stone, and as Nidoking is the more offensive counterpart, this thing is a beast in the early game, he learns Thrash upon evolution and learns Megahorn at Level 55. Nidoking has a wide TM movepool like Nidoqueen, which does make up for evolving him as soon as you get the Moon Stone, I would highly recommend Nidoking or Nidoqueen, depends which one you prefer.
