Overall Strategy:
Make sure you turn autosave off when you start the mission. There are 3 challenges you can complete during and just after the mission if you do this right. Assuming you had autosave on when finished the last mission, this will allow you to reload if you miss a challenge. It's worth getting this now, and replaying if you don't as it is much easier than relying on the game's RNG to spawn the animals you need for it in the wild. If the location shown to scare the birds from the trees does not work for you, try the trees over the road from the post office.

Whilst you walk over, and tour the ranch, keep your eye on the skies. There may not be any (and there aren't in my playthrough here), but occasionally some birds may appear. If so, shoot them towards Sharpshooter 1

Shoot at the trees to scare birds nesting in them into flight. If you have followed the guide and killed at least 3 in the previous mission, 2 more here will complete the challenge as shown.

Shoot 5 rabbits to get this challenge - the challenge will only register if you had completed Sharpshooter 1 already - hence shooting those birds was so important

Kill 5 Coyote to complete this challenge as shown. Remember where you got them as after the mission you should skin them all to get Master Hunter Challenge 1.

Skin 5 coyotes that you killed during the mission. Once you have all four of this major in-mission challenge haul, I recommend turning autosave back on. Do not manually save just yet, as it is still dark and the Night Watch job is available (saving using the bed makes you sleep, advancing time)
