If you have never tried American Wagyu with a Bourbon Peppercorn Sauce, watch this video and you will absolutely change that!! This American Wagyu FIlet from @snakeriverfarms is incredible on its own, and has some of the best marbling ive ever had on a Filet myself, and i decided to elevate it by pairing it up with with rich Bourbon Peppercorn Sauce!

- 8 oz Filet
- salt and pepper
- rosemary or thyme ( optional if cooking sous vide)
- 1-2 tbsp olive oil
- 1.5 tbsp crushed peppercorns
- 1 small shallot diced
- 1/4 cup of bourbon of choice
- 1.5 cups of Beef Broth
- 1/3 cup heavy whipping cream
- salt to taste

Start by prepping your Filet by seasoning all sides with salt and pepper! I’m using Sous Vide, but you can use any method you prefer. If using a Sous vide, set the temp to 119 F for 2 hours. If using an oven of Smoker, set the temp to 225F and cook until the internal temp hits 119 F.

While the steak cooks, lets make the sauce! Start by adding the olive oil and diced shallot to a pan on medium heat. After the shallots start to caramelize, add in the crush peppercorns! its important that they are not fully ground and still partially intact. Continue to stir and cook for 2 minutes, then deglaze with the bourbon of your choice! This step is optional as the sauce is great without, however it add a nice depth of flavor.

Once the alcohol has cooked off, lets add the beef broth and let that come to a simmer for 2-3 minutes before adding the heavy whipping cream. Now be patient, continue to stir and let this simmer. after 5-10 minutes, it should reduce and thicken nicely! If you prefer an even thicker sauce, you can make a small corn starch slurry and add it to the sauce.

Now, lets get it out of the sous vide or off the grill /oven and give it a nice sear! 30-40 seconds per side in a hot pan using either beef tallow or avocado oil to sear.

Now you can slice it up, drizzle on that sauce, and enjoy the best bite of meat you have had in awhile!!
