The Secret to the PERFECT Prime Rib! | Smoked Prime Rib Roast recipe #shorts
Secrets out! Trust me, you can make the most incredible prime rib with very little effort… it just comes down to flavor and technique!!
For this episode of 12 days of Christmas dishes, we’re making the king of Holiday food!
Ingredients:
• 1 rib roast, prime grade is ideal!
• kosher salt for dry brine
• 2 cups of Beef tallow, I used @southchicagopacking
• 3 tbsp of @fyrstarter BLK by @overthefirecooking
• 2 tbsp Worcestershire sauce
• 1/2 a bottle of @cusocuts gravel by @chefcuso
Instructions:
1. This first step is most important!! Dry brine the roast by seasoning all sides generously with Kosher salt. Then place on a cooking rack on a tray and into the fridge overnight. The salt will absorb in, seasoning throughout!
2. The next day, grab out the roast and preheat your oven or smoker to 225F, but i always recommend a smoker!
3. Grab a bowl, and combine the beef tallow, hot sauce, w sauce, and gravel seasoning. Once it’s mixed well, massage that fat and flavor all over your roast!
4. Place the roast in the oven or smoker and cook until the internal hits 120F. When it does, pull it off and give it a quick sear before letting it rest for 30 minutes. Tent with foil to keep warm!
5. It should rest up to 127-130, and if you were patient and waited long enough, you’ll have the most flavorful, juicy, melt in your mouth piece of meat you’ve ever eaten!!
