Ingredients:
- 1 cup basmati rice
- 1/2 cup split yellow moong dal (lentils)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 carrot, diced
- 1 potato, diced
- 1/2 cup green peas
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil or ghee
- Fresh coriander leaves for garnish
Instructions:
1. Wash the rice and dal together and soak them in water for about 30 minutes. Drain and set aside.
2. Heat oil or ghee in a pressure cooker or a large pot. Add cumin seeds and mustard seeds and let them crackle.
3. Add onions and sauté until golden brown.
4. Add ginger-garlic paste and green chilies. Sauté for a minute.
5. Add tomatoes and cook until they turn soft and mushy.
6. Add all the diced vegetables, turmeric powder, red chili powder, and salt. Mix well.
7. Add soaked rice and dal to the pot and sauté for a minute.
8. Add 4 cups of water and give it a stir. Close the pressure cooker lid or cover the pot with a tight-fitting lid.
9. If using a pressure cooker, cook for 3-4 whistles on medium heat. If using a pot, cook on low heat until the rice and dal are cooked through and the vegetables are tender. Stir occasionally to prevent sticking to the bottom.
10. Once cooked, let the pressure release naturally. If using a pot, remove from heat and let it sit covered for 5-10 minutes.
11. Open the lid and gently fluff the khichdi with a fork. Sprinkle garam masala and garnish with fresh coriander leaves.
12. Serve hot with raita or pickle.
