Prepare for what is possibly my least favourite 100 coin Shine Sprite in all of Super Mario Sunshine, because in Gelato Beach, you have to search the entire course for coins, but the watermelons on the beach give 1 coin when broken, and it can be broken up to 10 times to get a coin from them, and there is also the Blue Coins in Gelato Beach as well.

Gelato Beach is my least favourite course to get the 100 Coin Shine Sprite, because most of the coins are well hidden. The best course to get 100 coins is Episode 8, and I recommend starting with the island with large trees, as they have a bunch of coins there, and then spray and jump on every Cataquack to get a coin from each of them, and there are three watermelons on the beach, and you get a coin for breaking them, and you can do it up to 10 times to get a coin, but there is a trick that I didn't know about, if you take a watermelon that isn't the biggest one to the Surf Cabana, you get a ton of coins, but it will be tricky to get all of them, so you are likely to only get up to four or five of them.
Then there is the rope area, and there is a bunch of coins there, and once you have 100, you can get the Shine Sprite, so that is Gelato Beach done, now the Blue Coins remain.
There are some Blue Coins that only appear in Episodes 1 to 4, and some that only appear in 5 to 8, and the most notable is the odd Cataquacks out, because in Episodes 1 to 4, there are a lot of Blue Cataquacks, and you have to stomp on a Red Cataquack to get a Blue Coin, and in Episodes 5 to 8, there is a Blue Cataquack on top of a tree which you can get a Blue Coin from.
For the Blue Coins that appear in Episodes 1 to 4, I recommend going into Episode 4, because there are some Blue Coins in the Sand Bird course, four of them are on different clouds while riding the Sand Bird.
For the Blue Coins that appear in Episodes 5 to 8, I recommend Episode 6, because Yoshi appears in that episode, the fruits are in the Sand Cabana, and the Yoshi Egg is on the peninsula, and one thing you can do with the fruits is you can pick one up and place it on the juicer to get a Blue Coin, and there is a Juice Generator which you can use Yoshi for, and you can uncover a Dune Bud, which gives you a Blue Coin when you spray it, another Blue Coin that requires Yoshi is eating the bees. Where the bees are has a line of coins, and the Blue Coin is at the highest point. Some parts of Gelato Beach give you a Blue Coin if you spray the sand to reveal markings, and some Blue Coins are moving with a school of fish, much like the Red Coins in Episode 6.
In some parts of Gelato Beach, you can spray the ground to reveal a tree, one notable area is where the Rocket Nozzle is, and you can use that tree to get to the higher cliff area, and there are two blue birds at the rope area, and they give you Blue Coins when you spray them enough times, and the green birds drop normal coins.
That is the Blue Coins done for Gelato Beach, and they can be tricky ones to find, although I would say it is harder than the previous two courses, and it had my least favourite 100 Coin Star, the next few courses have much easier 100 Coin Shine Sprites, including Pinna Park, as I have to do Episodes 5 to 8 there.
