From what I can tell, Stollen and Baum are a consistent difficulty spike for new players. Considering how much simpler the fight is with the correct strategy, this difficulty spike might have been unintentional on the developers part (a result of CyberConnect not tutorializing certain ailments like Bad Luck).

As shown in the video, it is possible to take out the flying boss (Stollen) very quickly if you make use Chick's skills, Risky Grenade (an attack that inflicts the Bad Luck ailment) and Stun Grenade (an attack that inflicts the Stun ailment). Bad Luck is an ailment that makes it easier to inflict other ailments. Stun's effect is obvious. You can optionally add Sock's Flame Grenade skill (it is very useful if you can't kill Stollen before he activates Stealth) though unlike the Stun effect, it isn't guaranteed (Burning "only" has a success rate of 70%, even with Bad Luck active).

The only issue with this strategy is that, in order to use it, Chick needs to have unlocked both Risky Grenade and Stun Grenade. If you don't have either skill unlocked, it is technically possible to inflict Bad Luck if you prepped some Risky Ammo and Stun Ammo beforehand, but 1) most new players wouldn't have known to do that and 2) I don't think special Ammo is even available this early in the game. The good news is that if you do lose, you can go back to an earlier point in this chapter and focus on leveling up Chick that way.

Anyway, it is VERY important to kill Stollen first because, besides the combination attack that Baum can ONLY use if Stollen is alive, Stollen will also regenerate Baum's armor, which means it's very hard and resource inefficient to go after Baum first.

Once Stollen is out of the picture, all you have to do is deal with Baum. Baum hits rather hard but once Stollen is gone, he can't use his strongest move anymore.

Here's an extra pro-tip: if you're nearing 50% HP, it's usually better to heal the Taranis than to defend. Defending does minimize Taranis damage but once your tank is around or lower than 50% HP, your gunners will be in danger of incurring ailments like Fear, Injury or even Depression. Basically, it's sometimes better to heal and tank damage with the Taranis than it is to risk "gunner damage"
