To hold up a guard in MGS2, while undetected, stand behind them and aim your weapon in first person.

From the front, aim your weapon at their head and / or groin until they give up their items. They can hold multiple items, and this can include dog tags, which are collectables which unlock bonus items across multiple playthroughs of every difficulty.

If a guard resists and doesn't give him any items, you can shoot a limb to change their mind. This won't work with a tranquilizer round, by the way - it'll simply knock them out!

Alongside choking and using a tranq gun, holding up guards is one of many ways to quietly pacify enemies. Holding up enemies and getting dog tags are requirements for the 'Hold Up-aholic' and 'Animal Control' Trophies / Achievements in the remaster.
