I’ve seen Bacon Jam around for so long, and I’ve never made it until now! I figured why not put a fun twist on it and make a Whisky Jalapeño Bacon Jam!

1 lb diced bacon
1 large thinly sliced sweet onion
2-3 oz of Bourbon. I used @wellerbourbon antique 107
1/3 cup of brown sugar
1-2 thinly slice jalapeños, seeds removed
2 oz espresso
1oz water
1 tbsp balsamic vinegar

Start off by heating up a pan over medium to medium high. While the pan is heating up, add in the diced bacon and let that start to cook and the fat render out. This will cook for 8-10 minutes until the bacon is slightly crispy.

Remove the bacon and let that drain, while also removing about 1/2 of the bacon grease from the pan. Then you can add the onions and let them start to soften. After 2-3 minutes, add the bourbon and flambé while carefully stirring the onions.

After the onions continue to soften and caramelize for about 15-20 minutes, add the brown sugar and let that melt into the onions. Once melted and mixed well, add the thinly sliced jalapenos to the pan and mix them in.

Stir occasionally and let this continue to caramelize over 25-30 minutes. Then we can stir the bacon back in before we add in the espresso and water to the mixture and let it simmer.

Once the mixture has thickened and reduced slightly, it’s time to transfer to a mixing bowl and add in the balsamic vinegar.

Now you are all set to serve this up on a burger, steak sandwich, or shoot… even on its own!
