Im in love with using a blended Chimichurri on my burger! It’s fresh, rich, and brings a subtle kick that I think is a perfect compliment for a burger like this! Give it a shot, and let me know if you have a different burger you think I need to try!

Ingredients:

- 4 1/4 lb Burger patties - @eatmeatdistrict
- Seasoning of choice, I used Canyon crust by @chilesandsmoke
- 2 Brioche buns
- 4 slices of pepper jack cheese
- 1/2 an avocado sliced
- Tomato, sliced
- Salt and pepper

For the chimi sauce:

- 4-5 cloves of garlic, minced
- 1-2 serrano chilis, minced
- 1 Shallot, minced
- 1 bunch of parsley
- 2-3 tbsp White wine vinegar
- Juice from 1 small to medium lemon, about 2-3 tbsp
- Salt and pepper
- Olive oil

Instructions:

1. Start by prepping the shallot, garlic, and Serrano chiles. A uniform small dice or mince works best.

2. Then combine the parsley, and minced veggies into a bowl, followed by the white wine vinegar. Stir to make sure everything is coated, then add the lemon juice along with Salt and pepper to taste. The final step of the Chimichurri is to add olive oil 1-2 tbsp at a time, and mix it in. The sauce should be slightly thick still.

3. You can use the Chimichurri as is, but I recommend tossing it all in a blender and pulsing a few times to get a more sauce like consistency that still has texture. Transfer to a container and let sit while we make the burgers

4. Heat up a pan over medium high heat, and dd 1-2 tbsp of beef tallow. Once the pan and tallow is up to temp, place in the burger patties. At this point, season the tops with whatever you prefer, but I really recommend the rub I used!

5. Cook off 3 mins per side, flip, and make sure you season the other side after the first flip! When the patties are cooked through, move to a wire rack to rest. Using the same pan, toast the buns, and set those aside.

6. Right before serving, melt the cheese over the top, you can used a broiler or a torch for this. Then using whatever toppings you prefer, put together your masterpiece!
