Now that Team Rocket have been cleared out of Saffron City, it is time to challenge the Saffron City Gym and the Psychic-types they use. Much like in the original games, there are warp panels and we can get to Sabrina and the Trainers in this Gym with the use of those warp panels.

As the rest of the description, I recommend watching the full video before reading past this point of the description.

I have decided to teach Iron Tail to Sandslash, because that is the only Steel-type move it can get, and Iron Head is not in this game, and I did consider Alolan Sandslash for the final team, but decided to use Scyther instead due to its higher Speed and access to U-turn. I have used some temporary Pokémon, like Gyarados and a few others, while my Alolan Exeggutor and Snorlax are final team members.
Saffron's Gym uses Psychic-type Pokémon as expected, and you need to have a Pokémon at Level 45 or above, which you should be at if you have battled all the Team Rocket Grunts in Silph Co., as well as the Trainers on the routes to Fuchsia City, and you can battle Sabrina before Koga, even though Koga is the 5th Gym Leader. There has been confusion over the years on whether or not Sabrina or Koga is the 5th or 6th Gym Leaders.
For the Gym Battle with Sabrina, she does have different Pokémon to what she had in the original games, I never understood why she had Venomoth in Red & Blue, as well as FireRed & LeafGreen, because Venomoth is not a Psychic-type, but at least they gave it to Koga in this game, and speaking of Poison-types, these Channelers use Haunter, which isn't even a Psychic-type, well it can learn Psychic-type moves.
Sabrina's team is Mr. Mime, Slowbro, Jynx and Alakazam. Mr. Mime likes to set up Reflect and Light Screen, and all of Sabrina's Pokémon know Psychic. Slowbro has Surf, Yawn and Calm Mind, so if Slowbro sets up with Calm Mind, that thing can be tough to take out, Jynx is easy if you have a Pokémon with Fire Punch or anything with a strong Physical Attack, as Jynx has terrible Defense, but Lovely Kiss can be tough to deal with, and her Alakazam hits very hard with Psychic, but you should be able to target its low Defense stat, its only other move is Night Shade, so it can't even do anything to Alolan Raticate if you are still using one at this point in the game. Scyther or Pinsir are good options, as X-Scissor can easily take out Jynx and Alakazam, if you have a Pokémon with Poison Jab, this should deal with Mr. Mime, and Slowbro is best dealt with by using Special moves like Thunderbolt or Shadow Ball.
After beating Sabrina, she will give you the Marsh Badge, I feel like the Soul and Marsh Badges should be swapped, because Soul Badge makes more sense for a Psychic-type Gym, and Marsh Badge makes more sense for a Poison-type Gym. She will also give you the TM for Calm Mind, and fun fact, Pikachu can learn Calm Mind in this game, so it's not just Alolan Raichu that can get Calm Mind. It is also a good move on a lot Special attackers, like Alakazam, Mr. Mime, Ninetales, Golduck, Clefable, Jynx and a few others.
Because I didn't want to make the video too short, I decided to show off Sea Skim with Lapras, because both Gyarados and Lapras are the only two Pokémon you can ride on with Sea Skim.
If you have a strong bond with your Pikachu or Eevee and talk to the Vermilion City Fan Club Chairman, you will obtain some outfits based on your partner's evolved forms, you will get a Raichu Outfit in Let's Go Pikachu, while in Let's Go Eevee, you will get outfits of all of Eevee's evolutions, Vaporeon, Jolteon, Flareon, Espeon, Umbreon, Leafeon, Glaceon and Sylveon, so it does at least reference Eevee's evolutions in future games.
