I am playing through Classic Mode with Pikachu in this video, and this is the last character on the starting roster, and while I do randomize a list to decide the characters, the playlist will display the fighters in order of how they are displayed on the roster, and I have done all the other starting characters, so Pikachu is the last one I am doing. Pikachu's Classic Mode route is I Choose You!, the line is a reference to the Pokémon Anime, it was the name of the first episode of the Anime, and it was also the name of the 20th Pokémon Movie, and in this route, Pikachu fights characters from the Pokémon series.
In Round 1, you fight against Pokémon Trainer, and the stage is Saffron City, and for this Classic Mode route, Poké Balls are the only items that appear, and the fighters are fought in order of the Pokémon National Pokédex number, so in this case, Ivysaur, Charizard, and Squirtle are number 2, 6, and 7 respectively in the Pokédex. In Round 2, you fight a Horde Battle against six Jigglypuff on Pokémon Stadium 2, and by the way, the plural is Jigglypuff, you don't add an "s" to the end of the Pokémon's name, so it's not "Jigglypuffs", but anyway, the six Jigglypuff are a reference to how in the main series Pokémon games, you can only carry up to six Pokémon in your party, and Jigglypuff's Pokédex number is 39. In Round 3, you fight two Pichu, and the stage is Prism Tower, the two Pichu are likely a reference to the Pichu brothers from the Anime short Pikachu & Pichu, and Pichu's Pokédex number is 172. In Round 4, you fight Lucario, who is number 448 in the Pokédex, and the stage is Spear Pillar, in Round 5, your opponent is Greninja, National Dex number 658, and the stage is Kalos Pokémon League, and in Round 6, you fight Incineroar on Pokémon Stadium, and Incineroar is number 727.
Next up is the Bonus Stage, and at the end, you fight Mewtwo, this one does not follow the Pokédex number order, because Mewtwo is number 150 in the Pokédex, and was thought to be the final Pokémon in the Pokédex, even though there was Mew, which is the 151st Pokémon in the Pokédex. You fight Mewtwo on Final Destination, and after defeating Mewtwo, you then fight Master Hand, a Maxim Tomato will spawn after defeating Mewtwo.
After that, the credits will roll, and the music for completing Classic Mode with Pikachu is Road to Viridian City from Pokémon Red & Blue, otherwise known as Route 1. You then earn the Fighter Spirit for Pikachu if you completed Classic Mode with it for the first time, well I guess you could refer to Pikachu as a "he", as the default Pikachu is the male Pikachu, and there is the Fighter Spirit for Pikachu Libre, which you can buy from the shop, and Pikachu Libre is female.
As Pikachu is one of the starting characters on the roster, it has its own unlock tree, and there are a set of characters you can unlock if you complete Classic Mode with that character, you can unlock a set of characters. For Pikachu's unlock tree, the following characters are Villager, Shulk, R.O.B., Mega Man, Isabelle, Mr. Game & Watch, and Pichu, while all other characters have 8 characters in their unlock tree, Pikachu has 7, and once all characters in Pikachu's unlock tree are unlocked, it will default to Mario's unlock tree.
