Looks like the major roadblock for me would be how Godot handles AnimationTree and Root Motion.

And it seems my conclusion of abandoning this project is near.

I do want to learn more about Godot but I don't think I will be redoing my project anytime soon. And I'm also thinking about just returning to Unity, and that may be the case but I think I won't be releasing it. It'll really just going to be a personal project.

I do look forward to using Godot some other time, because I fell in love with how very lightweight it is, but unfortunately I won't be able to use it for my intended project.
