Rocket Knight Adventures, or as I like to call it, Sonic and the Black Knight but actually good!
During Sonic's peak of popularity in the early 90's, a number of imitators were created to capitalize on the idea of a fast paced mascot character with attitude. Most of them fell into obscurity, with Bubsy being remembered as everything wrong with the trend.
Konami, arguably in their own golden age, proved you could compete with Sonic directly with Rocket Knight Adventures. The game's concept of playing as a knight with a rocket pack is inherently cool, and they really made the concept work with chaotic yet fun gameplay and plenty of great setpieces. Pushing the Genesis's CPU to the limit meant they could get away with such cool effects as reflective lava, screen filling lasers, and even a giant mecha boxing match.
On top of that, the game has a great personality. The protagonist, Sparkster, is an opossum Rocket Knight with plenty of fun expressions. He also has a cool Shadow esque rival named Axel Gear, who has an even larger presence than the game's actual main villain. The game takes place in a cool steampunk world known as the Kingdom of Zephyrus, which is under attack by an army of goofy pigs who run away in their underwear when attacked. It's the perfect blend of cool and charming.

I played on Hard Mode since the final boss has an extra phase on higher difficulties, but I was in for a ride because I forgot the US version actually renamed the difficulty levels. The US version's Hard mode is equivalent to the JP version's Crazy Hard, which starts you off with one life and where you die in one hit. I'm good enough to play and beat the game on Normal but not Crazy Hard--good thing I was using Bizhawk and could rewind! I try not to rely on that feature so much but at least it means I don't have to waste time editing tons of deaths out.
